All of our sourdough is slow fermented for maximum health benefits. Slow fermentation lowers the glycemic index of breads to help reduce blood sugar spikes. This also helps to promote healthy digestion and keep you fuller longer. Slow fermentation gives wild yeast and lactic acid bacteria time to break down complex carbohydrates and proteins (gluten). While not gluten-free, this slow fermentation period helps to reduce glutens to make it much easier to digest.
